Located in the back of a grocery store in downtown Hart, La Probadita is a total hidden gem. It’s a very popular spot during the season, when busloads of local migrant workers get dropped off to grab dinner and supplies after working the fields. Local residents also love the authentic food, simply served, and very fresh.
The gorditas here are exemplary, made with corn masa, that is rolled to just the right thickness. Stuffed with your choice of ingredients ranging from pork carnitas, shredded beef, chicken, carne asada and more. We had ours with nopales (cactus), and the tender and mild roasted strips were the perfect foil to the tart tomatoes, sharp white onions, and bright cilantro. Add the mellow soft corn pocket that they all come nestled in, and you have a perfect little snack.
